Elk, venison, and wild boar cured meats with selection of fine cheeses, crackers, and spreads
APPETIZER COURSE: Braised rabbit and ricotta ravioli
Homemade ravioli filled with braised rabbit, rich ricotta cheese and chives bedded on warmed spinach and mushroom salad and topped with Marsala reduction
SOUP COURSE: American Bison and sweet potato chili
Ground bison, sweet potato chili topped with cilantro , chopped red onion and avocado
SALAD COURSE: Autumn panzanella salad
Arugula with quails egg, cranberries, candied cashews, and maple vinaigrette
MAIN COURSE: Wild-caught halibut
Almond encrusted halibut accompanied by marmalade candied carrots and lemon couscous
DESSERT COURSE: Northern blueberry baklava
