This first weekend of the winter season is a fun combination of several things- guests
go out and cut balsam boughs and join our staff in making fresh wreaths to take
home for the upcoming holiday season. You can pick the size you want and the
extra trimmings, and you are welcome to make several, so you have enough for
good decorating or as a gift to a family who could use a nice unexpected gift for the
Then, for the weekend, we add some additional menu features to give you some
special dinner choices (including some smoked foods coming out of the smoker on
Saturday). Mark comes in both Friday and Saturday evening to play his keyboard
for some live background music to help set the mood while you are relaxing and
Guests are invited to join us on Saturday where we will teach you how to smoke
your own fish. You will see how we brine them overnight and then smoke them
over a special wood (everyone has a carefully guarded secret about the wood they
use). We bring our wood from Missouri. This is a hands-on activity so you will be a
participant from the beginning to the finished product. You will have a nice bag of
smoked fish to take home with you (plus crackers for snacking on your way back).
You will be the hit at your next home party when you bring these out for appetizers
and you can casually say you smoked the fish yourself on your last trip north.
